Papa Giuseppe Pasta Sauce

This pasta sauce (gravy) will even impress your 85 year old Italian Grandmother. As you can see by the picture below when I make this recipe I multiply it by 8.

1 – Sweet onion, chopped
1 – 32 oz. can tomato puree
1 – Clove minced elephant garlic (6 cloves regular)
1 – 8 oz. can tomato paste
2 tbsp – Extra virgin olive oil
1/8 tsp – Lemon juice
1 tsp – Basil, or 6 whole leaves
1/2 cup – Sweet kosher wine
1/2 cup – Red Vermouth
1 tsp – Dried oregano
1/2 tsp – Cayenne flakes
1 tsp – Dried parsley
1 – Bay leaf
1 tsp – Thyme

Heat the olive oil for a few minutes then add the onion. When the onion is transparent, add the tomato paste and cook until browned (about 10 to 15 minutes).

Add the garlic. Stir well and cook about 30 seconds until fragrant. Don’t let the garlic brown.

Add the basil, oregano and parsley. Sauté another 3 minutes.

Add the remaining ingredients and stir well. Bring to boiling and simmer slowly 40 – 45 minutes uncovered.
