Since we aren’t quiet ready to put this site together yet, I will begin posting some “Teaser Recipe’s” to wet your appetite. I can’t remember where I found the basis for this recipe although I believe I have to give most of the credit to someone’s boyfriends grandmother. Anyway, I modified it a bit to “kosherize” it. It’s perfect for Thanksgiving or just as a nice warm end to the day. Enjoy!

Sweet Potato Soup Teaser
Preparation Time – 15 Min
Cooking Time – 35 Min
Yields – 16 servings
Ingredients:
12 medium sweet potatoes, un-peeled and chopped
2 tablespoons minced fresh ginger
4 cups chicken or vegetable stock
2 cups water, or as needed
2 limes, juiced
4 (maybe a little bit more) cups of vanilla soy or rice milk
1 cup of raisins (if you would like)
1 bag of parve mini marshmallows
Note: You could reduce the water to 1 cup and up the stock to 5 cups if desired.
Directions:
Chop and boil potatoes with the skin on until nice and soft.
Drain potatoes and place them in large saucepan.
Add ginger and pour in chicken stock and water, and bring to a boil over high heat.
Puree potatoes, raisins, and lime juice in a food processor until smooth.
Return soup to saucepan and stir in milk; heat until warmed through.
Mix in marshmallows until they have melted in.
