Best Gazpacho EVER!

This is a super simple recipe and tastes delicious. Get your blender ready and toss it all in. Enjoy!!


1 ½ lb. tomato (about 2 ½ cups), diced
1 large cucumber (about 1 ½ cups), diced
1 yellow pepper, diced
3 cloves garlic, minced
2 scallions, white and light green parts minced
¼ cup red wine vinegar
1 cup spicy tomato juice
2 tbsp. Worcestershire sauce
½ tsp. smoked paprika
2 tbsp. lime juice
¼ cup chopped parsley
¼ cup chopped basil
2 tsp. kosher salt
¼ cup olive oil
1 ½ oz. stale bread, torn into pieces

Toss everything together in a bowl. Puree 2/3 of the mixture in a blender and combine with the chunky stuff left in the bowl. Serve cold with toppings.
